Described the value of good nutrition in childhood and adolescence. The data of monitoring of catering in educational institutions in most regions of the country and concluded that the funds allocated from the regional and municipal budgets for strengthening the material-technical base of school canteens, in most cases, is not enough. Studied dietary intake 495 students enrolled in the 1 - 11 classes of various educational institutions of the city of Ufa. A sociological study of parents of students of educational institutions participating in the pilot project to improve school nutrition. In assessing the diets of schoolchildren found their discrepancy principle of quantitative and qualitative good nutrition. The content of protein in the diet was below normal in all age groups and cover age need to 55,46-72,87%. The fat content in the diet of schoolchildren was minimal (50.43% age norm) in girls 11-14 years and a maximum, but not reaching the age requirements for boys 7-11 years of age (75.07% of normal). Carbohydrate content varied from 59.03% of the daily needs of girls 14-18 years to 78.29% in boys aged 7-11 years. Diets deficient in schoolchildren vitamin content in all age and sex groups, as well as the content of phosphorus, magnesium, iron and excess sodium content. All parents say that in schools where their children study, there were positive changes in school meals during the project to improve nutrition in educational institutions. Based on these results practical recommendations to improve the management system of school meals.
